My name is Patrick, founder of Lister Management. I have over 20 years of hands-on experience in the industry. I’ve navigated so many challenges, from the never-ending hell of the dish pit to the "Oh shit, we're fucked" and the "Everything's great!" management meetings. I even had the pleasure of sitting in the ER with employee mishaps and personally handling bursting sewer pipes. Most of my career was certainly filled dealing with the mundane and staying consistent and constantly trying to improve but the unique challenges have not spared me.
I started my career working at In-N-Out where I developed a solid foundation of what it means to provide good customer service and the mindset it takes to engage with customers hour after hour and day after day. From there I found myself all over the place, from grilling hot dogs, bussing tables, running in-home catering events, sweating it out as a line cook, and delighting customers table-side in fine dining. The most challenging and exciting experience was managing a restaurant during the pandemic. Going from maximizing on the depressive limits of what we were able to offer, to managing the daily challenges of explosive growth. This wealth of experience and a scrappy mindset instilled in me a deep appreciation for every role within a restaurant, from the front lines to the heart of the house.
Over the years I learned that the art of efficiency, quality control, and customer satisfaction is foundational to running a restaurant. Every decision made needs to keep those three things in mind. As hard as that may be we can never loose sight of it. Each role I held enriched my understanding of the unique dynamics and demands of the different restaurant environments and has only deepened those foundational values.
